Hollandse Maatjes is the Dutch national fish — young herring caught in early summer, before they've had a chance to feed on fatty North Sea sprat, then lightly brined in a centuries-old method that keeps them silky, delicate, and deeply savory. The Dutch have been eating it this way since the 1400s, usually tilted back by the tail above an open mouth, or chopped and served on a small white roll with raw onion.
This is the real thing: a 4-pack of fresh, vacuum-sealed maatjes from the Dutch season. Keep refrigerated and eat within a few days of opening. Contains fish.
